Choc banana hemp muffins

Ingredients

  • 1/2 cup coconut flour
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 tsp baking powder
  • 3 eggs
  • 1/4 cup coconut oil
  • 1/4 cup pure maple syrup
  • 2 ripe bananas, mashed
  • 2 scoops hemp protein
  • 2 tbsp cacao powder
  • 1/4 cup almond milk
  • 60g chopped dark choc
  • 1 teaspoon vanilla extract

Method

1 – Preheat oven to 180c degrees and line a muffin tray with baking paper or cases
2 – Mash 2 bananas then mix through all remaining ingredients.
3 – Transfer the muffin batter evenly across 10 muffin cups
4 – Bake at 180c degrees for 20-25 minutes
5 – Transfer to a wire rack and let them cool.
6 – Once cool, top with melted choc and sprinkle of cacao nibs and hemp seeds
