Savoury Hemp Breakfast Muffins

Serves 7
G.F – D.F – R.S.F

Ingredients –

  • 1/4 coconut flour
  • 1/4 cup hemp protein
  • 1 tbsp mixed herbs
  • 2 tsp cumin
  • 2 tsp baking powder
  • 1/8 cup hemp seeds
  • 4 eggs
  • 1 grated zuchinni
  • 1 grated carrot
  • 1 chopped capsicum
  • 1/8 cup olive oil

How to

Preheat oven to 180 degrees and get a muffin tray – I used a non stick silicon one
Combine all ingredients into one bowl
Mix until thoroughly combined
Pour batter into muffin tray spread evenly
Cook for around 15-20 mins or until cooked through
Leave to cool
Enjoy

Morning Mocha Smoothie

Serves 1

Ingredients

  • 1 ripe or frozen banana
  • 1/3 cup steamed or frozen cauliflower
  • 1 tbsp hemp seeds
  • 1 tbsp cacao powder
  • 1/2 tbsp hemp protein
  • 1/2 tsp instant coffee
  • Handful of ice
  • 1 cup nut milk (I used coconut)

Method

Add all ingredients to a blender and blend till smooth
Pour into a glass and sprinkle over hemp seeds
Enjoy

Paleo Hemp Lemon Muffins

Serves 6

Ingredients

  • 1/2 cup coconut flour
  • 3 tbsp hemp seeds
  • pinch of pink Himalayan salt
  • 1 tsp baking powder
  • 1 tbsp lemon juice
  • zest of 2 lemons
  • 2 tbsp coconut oil
  • 1/2 cup nut milk of choice (we used hemp milk)
  • 3 tbsp monk fruit sweetener
  • 3 eggs

Method

Preheat the oven to 180 degrees celsius prepare a muffin tray
In a large bowl combine all of the dry ingredients and then stir through the remaining wet ingredients
Once mixed through thoroughly separate into prepared muffin tray
Sprinkle over with hemp seeds before baking in the oven for around 15-20 mins
Once golden, remove from oven and leave to cool

Winter Warming Hemp Crumble

Serves 6

Fruit layer

  • 5 apples
  • 4 feijoas
  • 1/2 tsp cinnamon
  • 2 cups berries (can use frozen)
  • Crumble
  • 3/4 cup quick oats
  • 1/2 cup hemp seeds
  • 1/2 cup shredding coconut
  • 1/2 cup almond flour
  • 1/4 cup pure maple
  • 2 tsp cinnamon

Method

Peel the apples and cut them into small cubes, leaving out the core. Once chopped, place in a big pot with the feijoa’s, berries and cinnamon! Before boiling add about a centimeters worth of water to the bottom at the pan. Place the lid on the pot and leave until fruit becomes soft.
Next preheat the oven to 180 degrees before making the crumble
To make the crumble add all ingredients into a bowl and mix till combined. Then leave this bowl to one side.
Once the fruit layer is soft transfer it into the bottom of a baking dish and layer the crumble above it. Then bake for 10-15 minutes or until browned!

Peanut butter hemp brownies

Serves 18

Ingredients

  • 2 eggs
  • 3/4 cup oat flour
  • 1/4 cup hemp protein
  • 1/2 tsp baking powder
  • 1/4 cup cacao powder
  • Pinch of salt
  • 2 tbsp hemp seeds
  • 3/4 cup almond milk
  • 3/4 cup peanut butter
  • 1/2 cup coconut sugar
  • Tsp vanilla extract
  • 100g dark choc chips
  • Topping
  • Extra PB
  • Hemp seeds

Method

Preheat the oven to 180 degrees.
Add the Oat Flour, hemp protein, cacao powder, baking powder, and salt in a large bowl and stir till combined. Then add remaining ingredients and mix until a thick batter forms.
Pour the batter into a baking tray with baking paper and spread it around evenly.
Next, spread a thick drizzle of nut butter around the top of the batter then use the back of the spoon and swirl around. Sprinkle over some hemp seeds before placing in the oven.
Bake for around 20 mins then leave to cool before removing.

Acai Bowl

Serves 1

Ingredients

  • 1/2 pack frozen açai
  • 100g frozen mixed berries
  • 1/2 frozen banana
  • 1/2-1 cup almond milk (depending on desired consistency
  • 1 tbsp hemp protein
  • 1 tbsp nut butter
  • 1/2 tbsp hemp seeds

Method

Combine all ingredients into a blender until smooth and then top with your favourite fruits and granola

Choc Hemp Porridge

Serves 1

Ingredients

  • 1/3 cup oats
  • 1 cup water
  • 1 tbsp hemp seeds
  • 1.5 tbsp cacao powder
  • Pinch of cinnamon
  • 1 tbsp plant or hemp protein

Method

In a pot add all ingredients and stir over medium heat
Keep over heat until you reach desired consistency
Top with all your favourite toppings

Choc chip banana bread

Makes 1 loaf

Ingredients

  • 2.5 mashed bananas
  • 1/4 cup melted coconut oil
  • 1/4 cup coconut sugar
  • 1 egg (if vegan sub for flax egg)
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 3/4 cup almond meal
  • 1/4 cup hemp protein
  • 2 tbsp hemp seeds
  • 75g chopped up dark choc
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

Method

Preheat the oven to 180 degrees celcius and line a loaf pan with baking paper
Peel bananas into a blender and blend until mashed. Add the remaining ingredients and blend until combined
Pour batter evenly into prepared loaf pan. Top with half a fresh banana and a sprinkle of hemp seedsd
Bake for 60-70 minutes.
Allow to cool on a cooling rack for about 1 hour.
